How it started

It Began Behind the Auto Shop

Freddy J didn’t set out to open a barbecue joint. He started smoking for his own family, out back behind the shop, where he could keep an eye on a long cook between jobs.

The smoker sat behind Kneble’s Auto Service Center for a simple reason: a brisket runs twelve to fourteen hours, and Freddy needed to watch it through the workday. Low fire, steady smoke, lid stays shut.

It didn’t stay a family thing for long. The smell carried. Employees wandered over, then customers waiting on their cars started asking what was cooking, and whether they could buy a plate. The answer, eventually, was yes.

Same approach today, just more of it. The smoker fires almost every day now: meat rubbed by hand, smoked slow over a real fire, sliced to order. Ribs run on the weekends. If you want barbecue that tastes like somebody actually stood over it, this is the place.
