An Evening of Lone Star Flavor
On Wednesday, July 30, Freddy J’s Bar & Kitchen transforms into a Texas smokehouse at sunset.
Sweet molasses drifts through the air as friends gather around tables made for sharing.
Five courses showcase bold, smoky traditions and local spirit, each elevated by a signature cocktail or beer pairing designed to bring out the heart of Texas.

Amuse‑Bouche: Smoked Brisket Toastada
A crisp blue corn tostada layered with tender smoked brisket, aged cheddar, and jalapeño‑poblano crema, finished with pickled red onion and micro cilantro.
This playful first bite is matched with sparkling wine whose bright bubbles cut through the smoke and ignite your palate.
Salad: Grilled Peach and Brie Salad
Caramelized peaches and melting brie rest on peppery arugula, crowned with candied spiced walnuts, a swirl of peach‑jalapeño jam, and ribbons of molasses‑balsamic glaze.
The Prickly Pear Margarita brings a hint of tart fruit and smooth tequila to balance sweet and savory notes.
Starter: Smoked Duck Breast
Cherrywood smoked duck atop creamy jalapeño‑cheddar grits, served with toasted corn salad and a crunchy blue tostada.
Paired with Shiner Bock, its rich malt and gentle bitterness echo the duck’s smoky depth.
Dinner: Texas Style Beef Ribs
Fall‑off‑the‑bone beef ribs glazed in bourbon barbecue sauce, accompanied by honey‑butter cornbread, braised collard greens, and silky sweet potato purée.
The Garrison Honey Dew Old Fashioned adds mellow bourbon warmth and a whisper of honey to complement the ribs’ bold flavors.
Dessert: Bourbon Brown Sugar and Peach Bread Pudding
Warm bread pudding infused with bourbon and caramelized brown sugar, crowned with vanilla bean ice cream and brown butter Bavarian cream
The El Oso Blueberry Peach Dessert Cocktail lifts each bite with fresh fruit notes and a bright finish
